I still can't believe the me which existed 10 years ago would rarely ever eat breakfast but now I can't live without it. Some days it might just be a slather of peanut butter on toast but others are a little more elaborate.
For special occasions (ok, every Saturday morning) I love to whip up a batch of delicious homemade waffles. It's become quite the tradition in our house, is super simple to make and only needs 6 ingredients, plus any toppings your heart desires! This recipe can also be tailored for those who are vegan or have a dairy allergy and are already egg free.
Best Waffle Recipe
Ingredients
2.5 cups Plain Flour
4 tbsp Caster Sugar
4 tsp Baking Powder
2 cups Milk (or milk alternative, we use Almond)
4 tbsp Melted Butter (or dairy free spread/Nuttelex)
4 tsp Vanilla Essence
Equipment
Large mixing bowl
Measuring cups and spoons
Balloon whisk
Waffle Iron (we own a Breville)
Butter knifeÂ
Cooling Rack
 Mix all dry ingredients together. Add in all wet ingredients, then mix with a whisk until well combined. Pour approximately 1/3 cup of batter (this will vary depending on your waffle iron) into the centre of your heated waffle iron. Let cook for 4mins or until your preferred level of gold brown - I personally like them to cook and crisp for a few minutes little longer.
Safely remove waffle from iron with a butter knife and place on cooling rack.
To serve the waffles, select your favourite season fresh fruit (we enjoy berries and bananas), ice cream, syrup, or even Nutella.Â
