Looking to whip up some last minute delicious Easter goodies that are guaranteed to be a crowd pleaser? I have put together a list of my favourite Easter recipes for you to enjoy over the long weekend of celebrations!
Rainbow Meringue Pops - such a fun and colourful sweet treat or the base for a fabulous dessert. Dip in chocolate for an extra hit of sugar or top with fresh double cream, seasonal fresh fruit and sprinkle with a chocolate Flake to create mini pavlovas.
Vegan Carrot Cupcakes - I LOVE carrot cake but I often forget to include it in my baking repertoire, which is such a damn shame now I think about it!. This recipe was a staple when breastfeeding my eldest son who was/is anaphylactic to dairy and egg. I craved all the things I couldn't have and back in 2015/16 vegan options in supermarkets were rare, so I scoured the internet for vegan recipes to create delicious treats that tasted like the 'real thing'. The lemon icing in this recipe was a game changer and was the perfect substitute for the traditional cream cheese frosting. If you feel like being extra creative & Easter festive, buy or make little carrot decorations to top your cupcakes with.
Sugar Cookies - the perfect recipe to make in any shape for any occasion! I have used this recipe for birthday cookies for my boys nearly every year, Easter, Christmas or just because. If you wanted to make this recipe vegan, I simply use non-dairy alternatives and substitute the 1 egg for 1/4 cup of apple sauce which can be found in jars usually in the sauce/gravy section of your supermarket. Ensure you follow the icing instructions carefully, as this will be the make or break for beautifully decorated cookies which you'll be proud to show off or even gift.
Cadbury Creme Martini - I am willing to admit I haven't tried this recipe, yet! But one look at the ingredients and watching the video of it being made, it's definitely on my radar to make ASAP. Liquid creme eggs? Yes please!
