My Top 3 Go-To Picnic Recipes

I love having a few easy, go-to recipes bookmarked in my phone that I can whip up when heading out on a picnic as a family or with friends.

I am going to keep a few of my personal recipes up my sleeve for now, ready to share on Reels throughout Spring (did you see the Vegan Banana Bread one posted yesterday with my boys?) but for now, here are links to 5 online recipes that I have tried, tested and loved!

Best Cob Loaf 

Tip 1: Substitute brown onion with 2-3 stems of Spring Onion (white/light green section). Slice green section and use this to sprinkle on top of the cob loaf when serving.

Tip 2: Big crowd? Buy 1-2 baguette and cut into slices, lightly spray with olive oil and place in oven to lightly toast.

Tip 3: Add a side of veggie sticks (carrot, celery, capsicum) which are also perfect for dipping into the cheesy goodness!

Vegetarian Alternative: Substitute bacon for fresh or frozen spinach or a tin of creamed corn. 

Roasted Capsicum Hummus

Such a yummy recipe!! I never used to enjoy hummus until my eldest was born with allergies and I had to omit soooo many foods from my diet while breastfeeding him. Then I discovered there are good ones and meh ones but this recipe *chefs kiss* 🤌🏼

Tip 1: If you are like me and regularly substitute fresh garlic for mince, then I usually add a 0.5-1tsp of mince garlic. I suggest trying 0.5tsp first and adjust to your taste, much like the lemon juice, you may wish to add an extra squeeze.

Tip 2: I roast my own capsicum or pan fry if I am in a rush. I usually use 1 capsicum to get approx. 1/2 cup.

Tip 3: When serving, feel free to top the hummus with toasted pine nuts, fined diced roasted capsicum or even a light dusting of chilli flakes. 

Vegan Banana Bread

Even though it says it is vegan, I have provided tip to be able to make it to include dairy and eggs if you so wish! :)

Tip 1: If making for lunchboxes, make sure to avoid nut milks and opt for normal dairy milk (if no dietary req.) or you can use soy, oat or coconut milk.

Tip 2: Butter or margarine can be used instead of 'Tablelands Dairy Free Spread' or 'Nuttelex' if you are not dairy free of vegan.

Tip 3: Instead of the 1/2 cup of apple sauce, you can use lightly beaten 2 eggs.

Tip 4: Don't want to have to slice up the banana bread for serving? Spoon into muffin trays, each cup approx. 3/4 full to allow for rising and bake for 12-15mins.
